Sourcing in-season produce provides an elevated end result. Eating in synchronicity with the seasons offers more sustainable food options that are higher in nutritional content than their off-season counterparts.
To show you the springtime goodness that Fork & Flair can whip up, we’ve created a sample menu that includes cocktail hour hors d’oeuvres, NA beverages, two dinner entree options, and a combination Dessert+Late Night Snack offering!
Cocktail Hour Selections
Let’s begin with cocktail hour selections that emphasize bright colors and fresh tastes:
Honey Whipped Goat Cheese Phyllo Cup with Fresh Blueberry: A crunchy cup made of phyllo dough filled with tangy goat cheese whipped with honey and topped with a fresh berry.
Pickled Radish Cucumber Cups: Fresh cucumber slices hold radish shavings brined with vinegar, ginger, and black sesame seeds.
Thai Peanut Chicken Satay: Skewered chicken drizzled with a spicy peanut sauce.
Sweet Potato Avocado Bites: Roasted sweet potato discs topped with a dollop of fresh, seasoned avocado and grape tomato, garnished with microgreens.
Refreshing Non-Alcoholic Options
We also love to get creative with non-alcoholic drink options! For this light and breezy spring wedding, I would recommend offering our Watermelon Mint Lemonade and/or Classic Arnie Palmer mocktail, in addition to what your standard bar service can provide.
Dinner Service: A Delightful Experience
Getting into the dinner service, we will, of course, start with salad. We’ve chosen the standard House Garden Salad paired with our Homemade Poppyseed Vinaigrette. The mixed greens, tomato, onion, and cucumber provide a hearty vegetable base while the Poppyseed Vinaigrette adds a bright spot to the plate.
For the dinner itself, we’ve put together three entree options, each with a unique side pairing.
Entree Options
Entree #1:
Salmon Filet with Apricot Chutney: A sweet (and dairy-free!) fruit sauce that pairs deliciously with our seasoned salmon filets.
Spring Sweet Pea Risotto: A creamy, cheesy rice dish peppered with tender sweet peas.
Candied Baby Carrots: A vegetable garden staple sweetened with butter and brown sugar.
Entree #2:
Pesto Stuffed Chicken Breast with White Wine Tomato Basil Sauce: Juicy chicken breast stuffed with pesto and topped with a light and herbal cream sauce.
Au Gratin Potatoes: Sliced potatoes smothered in cheese and a garlicky white sauce.
Tomato and Balsamic Cauliflower: Roasted cauliflower and grape tomatoes drizzled with a balsamic glaze reduction.
Vegetarian Option:
Creamy Farro with Asparagus and Peas: A hearty grain with slightly nutty undertones mixed with a heavy cream sauce and tender veggies.
Late Night Snack: Keeping the Party Going
Once dinner is finished and speeches have concluded, your guests will be raring to dance the night away in celebration of you and your partner! They’ll definitely need some sustenance to keep the party going until last call. So, we thought we’d round out the night with a fan-favorite combo of dessert and Late Night Snack: Warm Mini Donuts. These classic sweet treats are loaded with Cinnamon Sugar, but we also provide Hot Fudge, Caramel Sauce, and Powdered Sugar as other topping options.
